Texture is used on paintings for a variety of reasons. There is the literal way, ground cover or foliage,
cobblestones and to make the paint surface come to life. A couple examples of techniques in texture are stippling with a nailbrush, just dab one end of the nailbrush onto the paint and dab it on the paint surface. Another is the use of a stencil brush and the process is the same. An other way is the sponge, take a small piece of the sponge and dip it onto the paint and dab the surface of the paper, you can use a synthetic brush for one effect or a natural brush for another. Another effect if to take your paint brush and spatter it onto the paper, you can use your finger or a knife and swipe it across the bristles of the brush, you can go heavy for a more dramatic effect, or for a washed out look water down the paint and add the paint to dampened paper.
I hope this will help you with some of your watercolor dilemmas.
